Chicken Green Bean (Leaf) Skewers

Servings: 3
  1/2 lb ground chicken (or beef)
2 tsps garlic (minced)
2 tsps fish sauce
a pinch of ground pepper
1/3 tsp of sugar
1/4 tsp flour
20 young bean leaves (or grape leaves)
In a bowl, mix the chicken, garlic, fish sauce, ground pepper, sugar and flour. Use a small coffee spoon to scoop a quarter-sized amount of the mix and place it on 1-2 bean leaves (as seen in the image below). Fold the sides of the leaf inwards and then roll the leaf tightly around the meat filling. Slide each roll onto a bamboo skewer.
Cooking method 1: Wrap the skewers in tin foil and cook in the oven at 350 degrees for 40 minutes
Cooking method 2: Cook the skewers on the bbq on medium (with the lid open) for 40 minutes
You can serve this with many different types of dipping sauces such as: Vietnamese dipping fish sauce, mayonnaise, sweet and sour sauce, etc.
