Chicken Zucchini Rolls

1 medium chicken breast

spaghetti noodles

1 small tomato

1 zucchini

1 tbs mayonnaise

1/4 onion


1 tsp soy sauce

1 tsp sugar


Filet the piece of chicken breast into 4 pieces. Use a peeler to produce 4 long strips of zucchini.  Marinate the chicken with soy sauce and sugar. Lay each piece of chicken onto a piece of zucchini and roll them up. Use chives to tie each roll. You may need to use up to 2 chives so the rolls don’t burst. Cook the rolls in an oiled pan on medium heat, turning them every now and then for up to 10 minutes or until the chicken is cooked. Cook a serving sized amount of spaghetti noodles and drain the water from it.

For the sauce, you’ll want to dice the tomato and cook it on medium heat. Add mayo and sliced onions. When the rolls are cooked, transfer them to a plate with the pasta and drizzle the sauce over top. Enjoy!
