Pumpkin Seafood Bowl is Perfect for Halloween!

1 medium pumpkin or squash

3 tiger shrimps (de-shelled)

1/4 zucchini (sliced)

1 imitation crab stick (diced)

4 tablespoons of chicken broth

Carve the top off of the pumpkin or squash and hollow the insides out. In a small pan, cook the rest of the ingredients on medium high heat until partially cooked (6 minutes). Load the filling into the pumpkin, close the pumpkin lid and bake for 15 minutes on 300 degrees.

This can be served with whole wheat sandwich bread as a lunch meal.
