Sauted Gourds and Tofu (Vegetarian Pork Belly)

Ingredients
1 small gourd
2 blocks of fried tofu
2 tbs dark soy sauce
2 cloves garlic
2 tbs water
1 tsp sugar
ground pepper to taste
Wash and cut the gourd into small bite sized pieces. In a small bowl, roll the gourd in dark soy sauce twice each to give it a dark brown color. Drain the gourds and let it sit in the sun for 3 hours or in oven on 250 degrees for 30 minutes. Cut the tofu into bite sized pieces as well.
Prepare a lightly oiled pan on medium high heat and add minced garlic. Cook until fragrant or golden. Add the gourds, tofu and sugar and cook for 5 minutes on medium low heat. You can add some ground pepper to taste.
This vegetarian dish can be served on a bed of white rice.
