Vietnamese Dessert Drink – Chè Bánh Lọt

300 grams of rice flour
50 grams of cornstarch flour
1 cup of sugar
500 grams of coconut milk
100 grams of green beans (skinless)
Vanilla powder
Green food colouring


Cook the green beans in boiling water until soft. Drain them. In a blender add the cooked green beans , sugar and a pinch of vanilla and puree the ingredients.

In a medium sized mixing bowl, add the flour and cornstarch. Mix the 2 together and then separate them into 2 bowls. Add a few drops of green food colouring to one bowl. Slowly pour cold water into one bowl and work the mix until the dough is smooth but not too wet. Do the same to the other bowl

Set aside a small pot of hot water. Roll a pea-sized amount of dough in your hand into any shape you want. As you finish, toss them into the pot of hot water. When you run out of dough, put the pot on the stove on high heat. Let it boil for 3 minutes and remove from the stove. Drain the cooked dough and rinse it with cold water.

In a small pan, add the sugar, 1 cup of water, coconut milk and a pinch of vanilla. Let it boil for 2 minutes. Let it cool for 5 minutes and pour it into a cup, layering it with ice and the green and white dough.
